Personality; Ruby is, in a word, clever.
A fantastic actress and master manipulator, Ruby has little trouble charming her way into and out of almost anything. She's smart, quick on her feet, and she understands people; despite being a demon, she's no bloodthirsty mindless killing machine, and instead is more than human enough to pass as one for a long time. That isn't an act; Ruby is very human, even after all her years, and though she's not afraid to get her hands dirty she doesn't have any interest in needless violence. She is even still capable of genuine compassion, growing attached to Sam and even the fallen angel Anna.
But, at her core, she's very selfish. Everything is about her survival, and her place in life, and while she might protect friends out of genuine friendship she'll still leave them if she truly believes she needs to in order to look out for number one. She's sneaky and manipulative, and has no qualms playing people against each other to get what she wants. She pulls a multi-year con in order to achieve her goals, in the process winning over Sam's affections to the point where he chooses her over Dean, and then she still manipulates Sam into doing exactly what she wants in order to raise Lucifer from Hell.
Ruby is snarky and casual, and a very easy talker. She's emotive herself (even if she never shows what she doesn't want to) and more than capable of reading other people; she's socially savvy and pretty up to date on pop culture, and she sasses and snarks with the best of them. She doesn't take being insulted unless it's in her best interests to ignore it; otherwise she'll go toe to toe if she feels like it and her temper can be fiery. She is afraid of being hurt, and certainly of death, but her fear is controlled and she can use it to her advantage to make other people believe she's more or less frightened of them than she truly is.
Everything about Ruby is controlled, and calculated; she plays everyone around her, even those she genuinely likes. When it comes down to it, Ruby is first and foremost, and what gets Ruby the best is what she does. She's incredibly patient but also incredibly focused, and a great example of slow and steady winning the race in the end.
